2 1/2 starch, 1 vegetable, 1/2 lean meat, 2 fat
Salad Dressing Ingredients
1/2 avocado (peeled, pitted)
1/4 cup fat-free, plain Greek yogurt
2 tablespoons lemon juice
1 teaspoon shallots (chopped)
3 tablespoons fresh dill (chopped)
1 tsp avocado oil
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
Salad Base Ingredients
2 avocados (diced)
2 cups dry farro
3 ounces reduced-fat goat cheese (crumbled)
4 cups arugula
1/3 cup green onion or scallions (chopped)
1/4 cup dried cranberries
1/4 cup chopped walnuts
Prepare farro according to package directions.
Prepare salad dressing, combine ingredients into a food processor and process to a smooth consistency. Refrigerate any remaining dressing for future use.
In a large bowl, combine cooked farro with arugula, green onion, cranberries, chopped walnuts and apples.
