Ingredients
- 1/2 cup cooked beets
- 1/2 cup plain, fat-free Greek yogurt
- 2 tablespoons cocoa powder
- 2 teaspoons maple syrup
- 1/3 cup coconut flour
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
- 1/4 cup unsweetened shredded coconut flakes
Directions
- Add all of the ingredients to a food processor except for the coconut flakes.
- Use a cookie scoop to portion out the batter. Roll into balls and freeze for 1 hour until firm.
- Remove from the freezer and coat with unsweetened coconut shreds. Store in the fridge and enjoy.
